The socket 775 would be better since video cards have a far greater impact on performance than CPUs, so you would be much better off running in SLI than having the 8 cores.
Now as the first person pointed out, you are going overkill with either one of these setups. 4 cores is overkill at this point for gaming, 8 cores is just ridiculous. The only time SLI is really a good investment is if you are getting two top of the line cards, which right now will run you in the area of $1500, which is not a great investment since in about 12 months you could buy a single $600 card that would outperform them.
But if you have money simply burning a whole in your pocket and you want to have both the 8 cores and the dual video cards, wait a few months and AMD will have their new dual socket board out that will support two quad cores and multiple video cards.
Seeing how most(all?) new games dont even take advantage of a single quad core CPU I dont think a dual quad core rig would be any better. Most new games dont take advantage of dual video cards either so really I dont know. I mean a dual core CPU with a top end video card is really all you need. If you got more money than brains go with the single quad core CPU with the dual video cards but remember the best video cards you can buy now will be obsolite in 12 months & long berfore the games will take advantage of the quad core CPU. NUFF SAID!
