Really, the only difference on the user side is if you want to network it with other computers. My gaming computer is installed with XP Home, but it stays at home and I am the only one who uses it. Now, if you want to take your system to LAN parties, then I suggest that you upgrade to XP Professional. I have seen no real differences in stability, operation, or security. (I can access other users files on my XP Professional computer at work.)
If you want to save a few bucks when you purchase your Operating System, I suggest that you purchase the OEM version. Tiger and NewEgg allow you to purchase the OEM version if you are purchasing another computer hardware item. (Keyboard, hard drive, CD/DVD burner, etc.)

Is it going to be on a network (i.e authenticating to a server) then go for professional. If its going to be stand alone or on a peer-to-peer network, home should be fine.
If you want everything you need for everyday use not only at home but in the office, purchase Windows XP Professional. In fact Home Edition and Professional aren't that different from each other but if you want extra features Professional is the best.
