When I set up two HD-s, when will I get better performance with MIRRORING or STRIPING mode?

Mirroring doesn't provide any performance increase, just redundancy. If you have two drives, you'll get increased performance by using RAID 0.
Raid 0 (Striping). Make sure you have proper backups though because in striping mode when one drive fails, chances are that your data will be irretrievable.
That depends on the rest of your system. Check the following page for the different RAID modes and see which is best for your system.

Reading this article from Wikipedia it sounds like Striped would give the best performance but would be the least tolerant to disk errors. If I was setting up a RAID, I would use mirroring so that even if one drive failed I would have a fully functioning backup.
