Nothing unless you're doing some serious gaming. Most new games now still don't use the processing power of one that card.

make sure your video card is not overclocked (it is required to say on th box if it is)
because overclocked is inreliable and heats up easily...
and yes if u play games that require high FPS
next gen like Transformers, yes you will see a big difference in FPS, and overall response...

an 8600gt is a mid-range multimedia card
the 8800 gts 320mb is a high-end performance gamer's card
8800 320mb is for more of those "hardcore" gamers when you want everything on full setting and screen resolution to the max
8600 256mb can still handle everything on todays market... HOWEVER when DIRECT X10 games come out you'll need a card that can play those...
in the long run 8800 320mb is better
