Double click on the .dmg file to open it, a disk image should show with the programs icon in a window. Click, hold, drag and drop that icon to the Applications folder. A pop-up asking for your admin name and password should appear. After installing, eject the disk image and trash the .dmg file by dragging it to the Trash icon. Go to Applications and double click the program you just installed. You can keep the shortcut icon on the Dock by ctrl clicking on it's icon and choosing Keep in Dock.
Just drag and drop the programs icon from wherever you've installed it to, usually Applications folder, to the Trash icon on the dock. Some programs will have installers that come with them. They will usually have uninstallers and you should use those when they do.
Try AdiumX, it can chat with AIM, Yahoo, MSN and other chat clients.

"dmg" means disk image. double click on that file and a virtual disk will show itself; and usually open a finder window with the "disk" contents displayed. If you see a package (looks like a cardboard box), double click that and it will start the install. If you see just an application or a folder, drag that wherever you want to store it.
As for uninstalling something, simply dragging the application to the trash will remove 99.9% of it; leaving a few bytes of preference files. a good piece of freeware I've used is called simply "appdelete". Don't have the source handy, but you should find it easily enough through a quick search.
