Can anyone tell me why my mac...?

The MacBook has default settings for screen brightness to save the battery etc. Also if you have a MacBook Pro, it has a sensor to tell how much light is in the room and adjusts the screen. You may be blocking the sensor somehow. First go to system preferences, go to energy saver and try adjusting the settings. You can have different times for battery and for the power supply.
because you bought yourself an apple product

I would actually suspect a weak power supply.
You mention that this is a new machine, see if you can reproduce it - once it is reproducible get it repaired / replaced under warranty.
The only other possibility besides a weak power supply is weak power - you may need to purchase a UPS or move the unit to a significantly different place. (ie take it out of the bedroom and plug it in at the kitchen table for a while - if that fixes it, you need a UPS.
bbk, how about you stop with the Apple bashing? Sounds like someone is a little mad because THEIR computer is pretty underwhelming.
Anyway, check your screen brightness. On most laptops, when you unplug the power cord the screen adjusts its brightness to save energy. You may want to check your power cord if it has problems staying connected.
