Why is my computer showing 2 monitors when i only have one?

There is no problem with your system. The explanation is 2 parts and may help you see what’s up.
1) HARDWARE
The Intel Express Chipset is an "Integrated" solution that comes with little or no RAM f its own. Instead, it uses some of the computer's main memory to function. You can set the amount of memory that it will "steal" from the operating system or stay with the factory setting. Integrated graphics are slower then others that have their own memory. Your Intel also comes with an S-Video TV output jack that is made for business presentations or to have a second external monitor. Windows sees this component as a second VGA so it assigns it a monitor, attached or not. The second monitor is almost always grayed out until you attach a cable to a working screen/TV. Windows assigns it the "plug and play monitor", but will also assign it a monitor that has been attached to the system in the past.
So having 2 monitors in the Windows display properties is totally normal!
2) PC PITSTOP
PC Pitstop determines the Video performance by measuring the amount of memory on the display adapter, the speed of the memory, the type of interface (PCI , AGP etc..) and the number of displays attached. It will see the system with 2 display outputs and give lower performance rating then the same system with only one display output. When you uninstalled the monitor that cannot be uninstalled, PC Pitstop saw a system with the same resources but less attached devices so it gave a higher performance rating when actually there was no performance change.
CONCLUSION
If you want to see the higher rating all you have to do is open your device manager and DISABLE the second monitor, don't remove it because it will always return. If you are not sure which one to remove, change the device manager settings to "View Devices by Connection" and browse until you see what is where.

I do not know why you are showing 2 entries, but if you verify that both entries are the same, try to disable the monitor instead of uninstalling.
