Is it possible that computer printer INK will dry up in a printer if not used in a few years (2-3 years)?

they will dry up and block the nozzle of the ink cartridge. You could clean it up but i don't think it would be worth it. Buying a new cartridge would be a smart way to go.
Absolutely it will dry up. This is why you don't buy spare cartridges too early... it's not like keeping a spare bottle of ketchup.
yes it could dry up. Most printers go into a sleep mode when you turn them off to prevent the ink from drying up, but that is a very long time.

If you aren't using it regularly, then keep the cartridges in the fridge to prolong their lifespan.
I'm not kidding, it really works.
It's dry and don't bother to try and get them refilled. The medium to hold the ink is a sponge like material that will dry to a fine powder. Toss the old cartridges and buy new ones. To be safe print out a test sheet once a week at least.
It wouldn't hurt to clean of the part where the ink comes out, and give it a good shaking before you go buy a new one.
