How can i change the scaning images to text?

you need OCR software to do that. Some scanners have the software bundled with it and some don't.
For getting text out of scaning images you have to use OCR software. A verry good softwear is Abby fine reader. Use the latest version.
your scanner must be supported by OCR device,
