Yes you can do that. Here are some things to consider:
* What kind of media / weight is the book itself printed on (Glossy, Porous type media, Plain paper).
*What do you want to do with the scanned image (Print, uploaded to web, etc.)
The higher the resolution you scan at the more prominent the the background noise and image quality will be (You may see half tones / dots. This depends on the quality of the image you are scanning and the output size).
Note: You could always scan up your image then open it in Photoshop and run a few filters on it (Dust and scratches, Remove noise, etc) These may not be the correct names.
